From my experience,
Make a list of invites
Mail or hand out cards at school/daycare/etc
Call the parents/guests a week in advance
Use Check off list for confirmed guests.
Plan for one or two more to show up just in case. you'll have extra leftovers but it's better than not having enouph

The last few parties that we have done, we have done paper invites for the kids, but also I send an evite (email invitation) to the parents. I find that the only reason why I don't RSVP quickly is that I usually have to find the invitation, type in the email or give the parent a call. Too much work for me! So when you get an evite or send one out everything is self contained to just reply. No looking for information and then it is great when you get to the party day and you need the details it is still all on the computer. No need to worry if your kid has taken the invitation to their room.
